Mandazi, often referred to as the African doughnut, is a treat loved by Kenyans and visitors alike. This fluffy, lightly fried bread can be enjoyed plain, with sugar, or topped with your favorite flavors. Is your mouth watering yet?
If you visit Kenya, chances are one will find its way onto your plate before long.
Served warm or cold, mandazi makes the perfect breakfast or midday pick-me-up. You've got to give it a try!
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup sugar
- 2 teaspoons baking powder
- 1 egg
- ¾ cup milk
- 2 tablespoons melted butter
- Oil for deep frying
Instructions:
Mix dry ingredients
In a large bowl, combine:
Flour
Sugar
Baking powder
Add wet ingredients
Stir in:
Egg
Milk
Melted butter
Mix until a dough forms.
Knead
Knead the dough on a clean surface until smooth (about 5 minutes).
Rest the dough
Cover and let it rest for 15–30 minutes.
Roll and cut
Roll the dough out (about 1/4 inch thick). Cut into triangles or any shape you like.
Fry
Heat oil in a deep pan. Fry the pieces until golden brown on both sides.(About 1–2 minutes per side)
Drain and cool
Place on paper towels to drain extra oil.
Serve
Enjoy warm or at room temperature with tea or coffee!
