Writer: MADE IN THE STREETSMADE IN THE STREETS

By David Hutchinson

Chapati is a beloved and traditional Kenyan dish, cherished for its soft, flaky texture and rich, comforting taste. The best part? It’s incredibly easy to make at home!

Ingredients:

- 2 cups all-purpose flour

- 1 teaspoon salt

- 2 teaspoons sugar

- 2 tablespoons oil (plus extra for cooking)

- ¾ cup warm water

Instructions:

  1. Prepare the Dough

    • In a large mixing bowl, combine the flour, salt and sugar.

    • Gradually add warm water while mixing until a dough forms.

    • Add the oil and knead for about 8–10 minutes until the dough is smooth and elastic.

    • Cover the dough with a damp cloth and let it rest for at least 30 minutes.

  2. Divide and Roll

    • Divide the dough into small equal portions (about golf ball-sized).

    • Lightly dust a surface with flour and roll each ball into a thin, round chapati (about 6–8 inches in diameter).

  3. Cook the Chapati

    • Heat a dry pan or skillet over medium-high heat.

    • Place a rolled-out chapati on the hot pan and cook for about 30 seconds until bubbles form.

    • Flip and cook for another 30 seconds, pressing gently with a spatula.

    • Flip once more and cook until both sides have golden brown spots.

  4. Serve and Enjoy!
